These bacon deviled eggs are rich, savory, and intentionally simple. Creaminess comes from a combination of mayonnaise and a small amount of rendered bacon fat, while crisp bacon delivers salt and texture. With no mustard or hot sauce, this version leans classic, indulgent, and crowd-friendly.

While this bacon deviled eggs recipe follows our specific palette, feel free to play with the flavors! I recommend starting off lighter with the mayonnaise and salt then tasting the yolk mixture and adjust as needed.

Kid-Friendly Steps
Cooking: Have kids help place the eggs into the egg cooker tray and gently set the lid on top. We love this kids kitchen stool to help them see over the counter!
Chopping: After the bacon is cooked and cooled, have the kids chop it up using our favorite kid-friendly knife and cutting board. The bacon does not need to be chopped perfectly for this recipe so it’s a great time to let little hands practice cutting!
Assembling: Let kids place the chopped bacon on top of the finished eggs. This is also a fun time to sample some bacon! (I always tell my kids the best part of cooking is sampling the food!)

Cook the Bacon

  1. Place bacon slices in a large skillet over medium heat.
  2. Cook until deeply golden and crisp, turning as needed.
  3. Transfer bacon to a paper towel-lined plate.
  4. Reserve the rendered bacon fat; set aside to cool slightly.
  5. Finely chop the cooked bacon once cooled.

Hard-Boil Eggs (Egg Cooker) 

  1. Fill the egg cooker measuring cup to the “hard-boiled” line and pour water into the cooker base. Place boiling tray over the heating plate.
  2. Pierce the bottom of the egg (the larger, rounder end) with the pin from the bottom of the measuring cup.
  3. With pierced side facing up, place eggs on the tray, cover, and start the cooker.
  4. Cook until the alert sounds (about 7–9 minutes).
  5. Transfer eggs immediately to an ice bath using a small glass mixing bowl (a bowl filled with water and lots of ice) and let cool completely before peeling. For this step, I like to use these kitchen tongs.

Bacon Deviled Eggs 

  1. Using a paring knife, slice eggs lengthwise and remove yolks into a bowl.
  2. Mash yolks with the back of a fork until smooth.
  3. Add mayonnaise, reserved bacon fat, salt, and black pepper. 
  4. Mix until creamy and well combined; adjust seasoning to taste.
  5. Spoon or pipe filling back into egg whites.
  6. Top with chopped bacon and a light sprinkle of paprika, if using. 

Notes

  • For a neat, professional finish, transfer the yolk mixture to a piping bag fitted with a star tip before filling the egg whites.
  • If you don’t have a piping bag, spoon the yolk mixture into a zip lock bag. To make this easier, place the open bag inside a small glass and fold the edges over the rim. This holds the bag open while you fill it. Then, cut open one corner of the zip lock and squeeze the mixture into the egg whites.
  • Start with 2 tablespoons mayo and add more if a looser filling is preferred.
  • Use bacon fat sparingly; it should enhance, not overpower.
  • Add bacon just before serving for the best texture.
