Description
These Maple Bacon Roasted Brussels Sprouts roast up perfectly crispy with salty bacon and a glossy maple-butter glaze. They’re a simple, crowd-pleasing side dish that feels special enough for a holiday table but easy enough for any weeknight. Perfect for pairing with roasted meats, cozy fall dinners, or your next dinner party menu.
Ingredients
- 1 1/2 lbs Brussels sprouts, trimmed and halved
- 6 slices thick-cut bacon, chopped
- 3 tbsp olive oil
- 3 tbsp pure maple syrup
- 1 tbsp butter
- 1 tsp apple cider vinegar (optional to add brightness)
- 1/2 tsp sea salt flakes
- 1/4 tsp freshly ground black pepper
Instructions
- Preheat the oven to 425°F.
- Line a baking sheet with parchment paper or foil for easy cleanup.
- Prep the Brussels sprouts.
- Trim off the bottom of the Brussel sprouts, and then cut them in half-length wise.
- Toss Brussels sprouts in a small glass bowl with olive oil, salt, and pepper.
- Spread them cut-side down on the baking sheet.
- Add the bacon.
- Chop the thick-cut bacon into small pieces. I like to cut each slice in half lengthwise, then cut across into 8–10 small pieces.
- Scatter the chopped bacon evenly over the Brussels sprouts.
- Roast in the oven for 22–28 minutes.
- Brussels sprouts should be deeply browned and the bacon crispy. Rotate the pan once for even cooking.
- Make the maple butter glaze.
- In a small skillet, melt the butter with the maple syrup over low heat until smooth and glossy (1–2 minutes). Add a splash of apple cider vinegar (optional).
- Pro Tip: Preparing the maple butter glaze can be completed earlier in the day and warmed up in the microwave before the next step.
- Toss and finish.
- Transfer roasted Brussels sprouts to a serving bowl and drizzle with the warm glaze. Toss to coat. Taste and adjust salt.
Notes
- For extra-crispy Brussels sprouts, make sure the cut sides stay face-down the entire cooking time.
- If your Brussels sprouts are very large, quarter them so they roast instead of steam.
- If your bacon releases a lot of fat, you can drain a little off the sheet pan before glazing to keep the final dish from being greasy—taste the sprouts first, though, because bacon drippings add great flavor.
