Ingredients
- 2 tablespoons olive oil
- 1 small carrot, finely grated
- 2 cloves garlic, minced (we love this garlic press for this step)
- 1 can crushed tomatoes (28 ounces total)
- 1/2 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon dried oregano
Optional but recommended:
- 1 small shallot or 1/4 small onion, very finely minced
- 1 small basil sprig or 2 tablespoons chopped fresh basil
- Pinch of red pepper flakes (omit for very sensitive kids)
- 1 tablespoon butter or a small splash of cream (for finishing)
Instructions
- Cook the base:
- Heat olive oil in a medium saucepan over medium-low heat.
- Add grated carrot and optional minced onion or shallot with a small pinch of salt.
- Cook for 5–7 minutes, stirring occasionally, until very soft and translucent. Do not brown.
- Add the garlic
- Stir in the garlic and cook for about 30 seconds, just until fragrant.
- Simmer the sauce
- Add the crushed tomatoes, oregano, basil, and red pepper flakes (if using).
- Bring to a gentle simmer.
- Cook gently
- Simmer uncovered for 20–30 minutes, stirring occasionally, until slightly thickened and well combined.
- Blend (optional but recommended for kids)
- Use an immersion blender directly in the pot, or carefully transfer to a blender.
- Blend until completely smooth.
- Finish and adjust
- Stir in butter or cream if using.
- Taste and adjust salt as needed.
Serving Ideas
- Toss with spaghetti, penne, or rigatoni.
- Spoon over cheese or meat ravioli.
- Use as a base for pizza night.
- Serve with small meatballs or turkey meatballs.
- Mix with a little ricotta for a mild “pink sauce” kids love.
