A creamy, whipped cottage cheese dip blended with garlic, shallot, and fresh herbs. Smooth in texture, savory in flavor, and versatile enough to serve with vegetables, crackers (we like the Cracked Pepper & Olive Oil Triscuits), or as a spread for toast and sandwiches.

  1. Mince the aromatics and herbs: Add the shallot, garlic, and herbs to a food processor. Pulse 6–10 times until very finely minced. Scrape down the sides so everything is evenly chopped.
  2. Add the cottage cheese: Add the full container of cottage cheese, salt, and pepper to the food processor.
  3. Whip until smooth: Process for 60–90 seconds, scraping down the sides as needed, until the dip is completely smooth and creamy. Transfer to a storage serving bowl.
  4. Rest and season: Taste and adjust seasoning if needed. Refrigerate for 20–30 minutes to allow the garlic and shallot flavors to mellow and fully come together.

Notes

Full-fat cottage cheese produces the smoothest, creamiest result, but low-fat is delicious as well.

Resting the dip is optional but recommended for a more balanced flavor.

The dip thickens slightly as it chills.

For a milder version, use a small garlic clove or substitute green onion for the shallot.
