This tomato bruschetta recipe is fresh, simple, and exactly what a good bruschetta should be. Juicy tomatoes, garlic, basil, and olive oil come together with minimal effort and maximum flavor. It’s one of our go-to appetizers for casual dinners, summer gatherings, or anytime we want something light that still feels special.

We make this at least one to two times a week in the summer. It comes together so quickly and is incredibly fresh!

Check out our pan con tomate appetizer too, as it’s also easy and delicious with similar flavors!

Kid-Friendly Steps
Discovery: Using a kids kitchen stool and wearing their kids aprons (to make it feel official), let kids help tear and smell the basil leaves before slicing. Smelling and tearing basil is hands-on and feels exploratory, not instructional.
Placement: After you slice the bread, let kids lay the pieces in a single layer on the baking sheet. Laying bread in a single layer gives kids a clear goal and a sense of control and competence.
Completion: Kids can gently spoon the tomato mixture onto the bread. Spoon-on steps make them feel like real contributors, especially when it’s preparing the final product.

This tomato bruschetta relies on ripe tomatoes and restraint. A small amount of olive oil keeps the mixture light, while garlic and basil provide classic flavor without overpowering the tomatoes. It’s best served immediately, while the bread is crisp and the topping is fresh.

Instructions

Prepare the Tomatoes

  • Using a paring knife and cutting board, dice up the tomatoes and add to the small glass bowl.
  • Stir in olive oil, minced garlic, and basil.
  • Season with kosher salt and black pepper to taste.
  • Set aside while preparing the bread to allow flavors to meld.

Toast the Bread

  • Preheat oven to 400°F.
  • Arrange baguette slices in a single layer on the baking sheet.
  • Toast in the oven for 4–5 minutes, or grill until lightly golden and crisp.
  • Remove and let cool slightly.

Assemble the Bruschetta

  • Spoon tomato mixture onto toasted baguette slices.
  • Serve immediately.

Notes

  • Use the ripest tomatoes available for the best flavor.
  • If the tomatoes are very juicy, drain slightly before mixing.
  • For extra garlic flavor, rub a cut and peeled garlic clove on the toasted bread before topping.
