This refreshing classic lemon sorbet is bright, smooth, and intentionally clean in flavor. It balances sweetness and acidity so it tastes vibrant without being harsh or icy. A simple syrup base ensures proper texture, while a small amount of corn syrup helps prevent large ice crystals. The result is a sorbet that feels refined but is easy to make at home.
We had some family over dinner and made this as a dessert for my Spanish paella and it was a hit! We have a lemon tree in our backyard so this recipe is perfect since it uses an entire cup of lemon juice (about 6–8 lemons)! As an appetizer, we also served my pan con tomate recipe, which was the perfect light appetizer to a very robust dinner. Description
The sugar-to-liquid ratio in this lemon sorbet prevents large ice crystals, while a small amount of corn syrup lowers the freezing point for a smoother texture. A pinch of salt sharpens the citrus flavor without increasing sweetness. This formula produces a balanced, scoopable lemon sorbet every time.

Ingredients
- 1 cup freshly squeezed lemon juice (above 4-6 lemons per cup)
- 1 tablespoon finely grated lemon zest. We use this microplane zester grater!
- 1 cup granulated sugar
- 1 cup water
- 1 tablespoon light corn syrup
- Pinch of flakey sea salt
Instructions
- Make the Syrup
- In a saucepan, combine water and sugar.
- Heat gently, stirring with a rubber spatula until fully dissolved. No need to boil.
- Remove from heat and stir in lemon zest.
- Let steep for 10 minutes.
- Add the Lemon Juice
- Strain out the zest using a fine mesh sieve if you prefer a very smooth sorbet (optional).
- Stir in lemon juice, corn syrup, and a pinch of flakey sea salt.
- Chill Completely
- Pour the mixture into a glass storage container.
- Refrigerate for at least 4 hours, preferably overnight. The base must be very cold before churning.

- Churn
- Pour into your ice cream machine.

- Churn for 20–30 minutes until soft-serve consistency.
- Pour into your ice cream machine.
- Harden
- Transfer to a freezer-safe glass storage container or reusable ice cream tub. Â
- Cover tightly with a lid.Â
- Freeze 2–3 hours until firm.Â
Notes
- Use freshly squeezed lemon juice only. Bottled juice will dull the flavor.Â
- Store tightly covered and freeze immediately to minimize ice crystals.
